Essential Tips For The Novice Smoker

Writing a website full of BBQ Smoker Recipes is a time consuming business even at the best of times. I take pride in ensuring that the pictures I put up on my site are of food that I have cooked and not some glossy template purchased on the internet and I also want my recipes to be innovative. What I enjoy most of all is when readers use my feedback form with ideas for improvements to my site and also to suggest recipes, there's so much creativity out there and to harness just a small amount of it is truly humbling.

It's a two way street of course and just as I get some great free barbecue recipes in return and I also get a lot of questions to which answers are free of charge. Many of the questions start with the sentence "I've just won / been given a smoker without any instructions and I'm gonna cook for 20 guests at the weekend, do you have any tips for me?"

I'm not sure about tips but my immediate reaction is a combination of:-

· Lucky you winning a smoker
· Cooking for 20 first time out, that's a challenge..........
· Cooking for 20 first time out - are you mad?

Barbecue cooking for any number of people is challenge enough but doing it on a piece of equipment that's never been used before is really asking a lot. Nevertheless I always respond with my "essential tips" for the novice smoker:-

1. Do a trial run. Not just to test your BBQ cooking abilities but also if the smoker is new it will be protected with an oily film that needs to be cleaned up. Just like any oven it's important to give it a run otherwise your first food will not taste right.

2. Keep the temperature in the smoker between 230 - 250°F

3. It's indirect cooking so heat should no be directly under the food, put the drip tray here and this will help keep it moist.

4. If it's a charcoal smoker the coals will start to cool after 60 mins so keep a steady stream on fresh charcoal available and change every 45 mins

5. Slow cooking is the order of the day and you'll need to allow up to 90 mins cooking time per pound of meat

6. Many argue that after 5 hrs smoking, the smoke adds no further flavour so you can finish off in the conventional oven if you wish. (Just wrap the food in foil to keep it moist)

7. Don't be tempted to lift the cover of the barbecue too often - you only let the smoke out

8. Use a thermometer to check the internal temperature.

9. Practice makes perfect - don't give up after the first attempt!

And that last point is so true, I've been cooking on grills and smokers for 20 years and I still get it wrong so don't be too hard on yourself if at first you don't succeed.

    Need a recipe for grilling/smoking beef boneless ribs. HELP!?

      you need a dry rub first. add the following items in equal amounts. Brown Sugar, Adobe Seasoning, Ground Pepper, Seasoning Salt, Garlic Powder and a pinch of cayenne pepper. Rub it on the ribs and then bake it at 250 degrees for a couple of hours in a deep baking dish. Sit the ribs on a cooling rack in the pan and add a couple of cans of beer and bake it.

      For the BBQ sauce take 1 cup of applesauce 1 diced onion 4 tablespoons of honey and maple syrup, 2 cups of ketchup, 1/4 cup of brown sugar. Put it on the stove on low and heat it until it reduces by half. If this is not enough bbq sauce then just double or even triple the recipe. You can do this all the day before you grill or smoke them. Put the ribs on your smoker and lather with the bbq sauce, you can use applewood or apple chips in the smoker adds a great flavor. Cook until done and keep turning them and adding bbq sauce every time you check them and turn them. Enjoy.

    How do I smoke/grill fall off the bone spareribs?
    I have tried several different rib recipes and still haven’t found the right one. I prefer smoked dry rub ribs. I cannot seem to get them as tender as i would like, they are either dried out or chewy. Can anyone help me!

      one method of getting really tender, fall-off-the-bone ribs, is to boil them or pressure cook them in water with a couple of cups of vinegar. It helps the meat to break down while it cooks. When they are starting to fall off the bone, take them adn place them on the grill over low heat and slather on your favorite sauces or add your favorite dry rub seasonings. This is the way my dad makes them and it turns out perfect every time.

    What’s Your Best Recipe For Pulled Smoked Pork ?.. .. . How About Grilled Or Smoked Chicken ?
    We’re having a cook-out tomorrow and I like trying other people’s recipes especially when it comes to grilling or smoking .
    FYI – I do have a Brinkman Smoker / Grill and I may try a couple of your recipes and then award Best Answer to whichever one gets the best reviews at our cook-out .

      I made canned pear preserves last fall. My husband swears that it is the best there is for kabobs. You can buy apricot preserves at the store put it in a small sauce pan add some Worcestershire, olive oil,pepper,and lemon juice warm that up slow. Taste to suit and use it as a marinade on fish or chicken and it is wonderful.

    What are some good bar-b-que chicken recipes?
    I want a recipe for smoking some bone in chicken breasts on a real Bar B Que pit, not a grill not in the oven. If you have a good sauce recipe give it too, but not a sweet sauce more of the thin vinegary dipping sauce.

      Chicken Pockets.
      Boneless breast of chicken
      Variety of sliced vegetables (i.e. potatoes, peppers, tomatoes, onions)
      1 ft. sheet of aluminium foil
      Step 1: Coat a 1 foot sheet of aluminium foil with olive oil.
      Step 2: Place breast of chicken at centre of foil.
      Step 3: Surround chicken with vegetables (add desired spices if desired).
      Step 4: Form an aluminium pocket by crimping edges and folding ends over to seal the pocket.
      Step 5: Place pocket on barbeque grill at medium to low heat for 30 minutes.
      Step 6: Remove from grill, opening pocket carefully to allow steam to escape.
      Step 7: May be eaten from pocket or served on dish.
      Alternatively they could be baked in the oven.

    Hubby got a BBQ / Smoker, we need recipes for smoked stuff!?
    If we don’t get some good recipes quick, he’s going to start smoking everything. We have a good brisket recipe, but would like to make smoked salmon, and whatever else is yummy smoked. He’s in love with this new thing and will be trying to make smoked grilled cheese sandwiches soon if I don’t think of something else he can smoke! Good BBQ recipes are also appreciated! Thanks!
